Lemon Zest Blueberry Muffins

Blueberry muffins

Ingredients

  • 2 Cups New Hope Mills Blueberry Pancake Mix
  • 1/3 Cup Sugar
  • 3/4 Cup Milk
  • 2 Eggs
  • Fine Zest of Lemon
  • 1/2 Lemon, Juiced
  • 1/2 Cup Butter

Directions

  • Preheat Oven to 350 degrees F. Grease or line muffin tin.
  • Combine dry ingredients in one bowl with lemon zest 
  • In another bowl combine wet ingredients
  • Pour wet mixture into dry mixture and mix till all is combined
  • Evenly divide muffin batter into 12 muffins
  • Bake at 350 degrees F for 20 min, or until baked.
