Ingredients:
- 1 box New Hope Mills Low Carb Banana Walnut Muffin & Bread Mix, prepared
- 4 eggs
- 1 tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
- 3 Tbsp erythritol
- ¼ cup heavy cream
- ½ tsp vanilla
- Butter for pan
Makes 12 slices
Directions:
Prepare the bread according to the instructions on the back of the package. Once bread is completely cool, cut loaf into 12 slices.
In a large, wide bowl, whisk the eggs. Add the rest of the ingredients and whisk until combined.
Over medium heat, heat a skillet and grease with butter. Soak a slice of bread in the egg mixture, flipping to soak both sides for about 30 seconds. Place the slice in the pan, flipping once golden brown, about 2 minutes for each side.
Serve with sugar-free pancake syrup.
