Raspberry Brie Cheese Chicken & Waffle Sandwiches
Ingredients
- 1 package of New Hope Mills Chicken & Waffles mix
- 3 eggs
- 6 Tbsp butter
- 3 chicken breasts cut in half length wise (to make 6 flat chicken pieces)
- Vegetable or peanut oil for frying chicken (at least enough oil to fill frying pan ¼ inch)
- 1- 6oz package of raspberries (about 1 cup split in half)
- ½ cup Raspberry jelly
- 2 Tbsp Lemon Juice
- 8oz of Brie cheese
Directions
- Preheat waffle iron
- Whisk 1 egg, 1 ¼ cup water 3tbsp melted butter and the bag of waffle mix then add ½ cup raspberries and stir till combined.
- Bake waffles and keep warm in oven.
- Slice 8oz package of brie cheese
- Preheat about ¼ inch oil in frying pan to about 350 degrees F.
- Prepare chicken breast slices: Split chicken breader into 2 bowls, in separate bowl whisk together 2 eggs. Lightly coat chicken in 1st bowl of breader then dip in egg mixture then coat in 2nd bowl of breader.
- Cook prepared chicken: Carefully place chicken into frying pan and flip when one side is golden brown and brown the other side (chicken is thoroughly cooked when inside temperature is 165 degrees F)
- Once chicken is done place desired amount of brie cheese slices on each piece and keep warm in oven with waffles
- To make sauce: in a small saucepan, ½ cup raspberry jelly, ½ cup raspberries, 2 tbsp lemon juice, 3 tbsp butter, heat and stir until bubbly.
- Use 2 quarters of waffles as the bun put 1 chicken breast with cheese and then drizzle the raspberry sauce on top of chicken.
- Enjoy!
Fiesta Chicken and Waffles
Ingredients
- 1 package of New Hope Mills Chicken & Waffles mix
- 3 eggs
- 3 Tbsp butter
- 3-4 chicken breasts cut in half length wise (to make 6-8 flat chicken pieces)
- Vegetable or peanut oil for frying chicken (at least enough oil to fill frying pan ¼ inch)
- 1 can of corn drained (14oz)
- 1 can of black beans drained (15oz)
- ½ tsp cumin
- ½ tsp of cayenne pepper
- ½ tsp garlic powder
- 8oz Pepperjack cheese shredded (or cheese of choice)
- 2 avocado’s sliced
- 1 small container of sour cream
- 1 container of your favorite salsa
Directions
- Preheat waffle iron
- Whisk 1 egg, 1 ¼ cup water 3tbsp melted butter and the bag of waffle mix then add corn, black beans, cumin, cayenne and garlic powder stir until combined.
- Bake waffles and keep warm in oven.
- Preheat about ¼ inch oil in frying pan to about 350 degrees F.
- Prepare chicken breast slices: Split chicken breader into 2 bowls, in separate bowl whisk together 2 eggs. Lightly coat Chicken in 1st bowl of breader then dip in egg mixture then coat in 2nd bowl of breader.
