Ingredients:
- 2 1/2cups of New Hope Mills Protein Pancake Mix
- 2 eggs
- ½ cup butter, softened
- 1 cup natural Peanut butter
- 2 cups light brown sugar
Directions:
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- In a stand-up mixer, or by hand, combine softened butter, eggs, and brown sugar.
- Stir in Protein Pancake mix until well combined.
- Roll cookie dough into 1-inch balls and place 2 inches apart on prepared baking sheet.
- Dip a fork in a glass of water, then press the fork gently on the top of each cookie dough ball to make a crisscross pattern. After crisscrossing each cookie, dip the fork in water again to prevent the cookies from sticking to the fork.
- Bake in the preheated oven for 8-10 minutes.
- Cool on baking sheet for 1 minute, then remove to a wire rack.
