Protein Peanut Butter Cookies

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a stand-up mixer, or by hand, combine softened butter, eggs, and brown sugar.
  3. Stir in Protein Pancake mix until well combined.
  4. Roll cookie dough into 1-inch balls and place 2 inches apart on prepared baking sheet.
  5. Dip a fork in a glass of water, then press the fork gently on the top of each cookie dough ball to make a crisscross pattern. After crisscrossing each cookie, dip the fork in water again to prevent the cookies from sticking to the fork.
  6. Bake in the preheated oven for 8-10 minutes.
  7. Cool on baking sheet for 1 minute, then remove to a wire rack.
