New Hope Mills Coffee Cake

Ingredients for the crumble:

  • ¼ cup New Hope Mills Buttermilk Pancake Mix
  • 1/3 cup brown sugar
  • 2 Tbsp melted butter
  • 1 tsp cinnamon
  • ¼ tsp cloves

Ingredients for the cake:

  • 5 cups New Hope Mills Buttermilk Pancake Mix
  • 4 Tbsp sugar
  • 1 tsp cinnamon
  • 1 egg
  • 3 Tbsp softened butter
  • ½ cup milk

Ingredients for the glaze (optional):

  • 5 cups powdered sugar
  • 3-4 Tbsp milk
  • 2 tsp vanilla extract

Directions:

In a small bowl, combine the crumble ingredients and set aside.

Preheat oven to 350°F. In a medium bowl, combine the pancake mix and cinnamon, set aside. In an electric mixer, cream together sugar, egg, and butter. Add the milk alternatively with the dry ingredients. Mix until well combined and pour into a parchment lined and well-greased 8×8 pan. Top with the prepared crumble and bake for 25 minutes.

Prepare a glaze by whisking powdered sugar, milk, and vanilla extract together. Once coffee cake is cool, drizzle glaze on top.
