New Hope Mills Gluten Free Chia Seed Muffins

Muffin Ingredients:

  • 2 cups New Hope Mills GF Chia Seed Pancake Mix
  • 2 eggs
  • 1 ½ cup milk
  • 6 Tbsp melted butter
  • ¼ cup brown sugar
  • 1 tsp vanilla extract

Optional: ¼ tsp cinnamon

Maple Glaze Ingredients:

  • 2 cups powdered sugar
  • 1 Tbsp milk
  • ¼ cup maple syrup

Makes 12 muffins.

Directions:

Preheat oven to 350°F. Grease or line with paper inserts a 12-muffin pan. Combine wet ingredients and stir in the dry ingredients, just until blended. Let batter sit for 3 minutes before dividing batter evenly into prepared pan. Bake 17-18 minutes or until toothpick inserted comes out clean. Cool 5 minutes before removing from pan.

Prepare a glaze by whisking powered sugar, milk, and maple syrup together. Once cool, drizzle glaze over muffins.
