Ultimate Hot Chocolate Cake in a Cup

Ingredients:
- 2 Tbs New Hope Mills Ultimate Hot Chocolate
- 2 Tbs New Hope Mills Buttermilk Pancake Mix
- 2 Tbs water
- 1 tsp butter or oil
Directions:
In a 10 oz or larger microwaveable mug, mix pancake mix and hot chocolate mix until blended. Add water and oil, mix thoroughly.
Microwave for 1 minute on normal power.
Let cool for 2 minutes before enjoying.
Optional: top with whipped cream or a scoop of ice cream.
I received the New Hope Mills Ultimate Hot Chocolate mix as a gift at Christmas time… I don’t have the pancake mix and most likely couldn’t use it because I can’t use and eggs! What is a good substitute for the pancake mix ingredient that is in the Hot Chocolate Cake in a Cup recipe? Thank you for any help you can suggest.

Great news -there are no eggs in our Buttermilk pancake mix. Hopefully you can get some and give this recipe a try.
