Mix together:
- 3/4 Cup Butter, Softened
- 1 Cup Brown Sugar, packed
- 1 Egg
- 1/4 Cup Molasses
- 2 1/2 Cups New Hope Mills Old-Fashioned Buckwheat Pancake Mix
- 1 tsp. Cinnamon
- 1/2 Tsp. Ground Ginger
· Preheat oven to 375°F and prepare two cookie sheets with parchment paper.
· Whisk together pancake mix, cinnamon and ginger, set aside.
· In a large bowl, using a hand mixer or stand mixer fitted with paddle attachment, cream butter and sugar together on medium or high speed until well combined and fluffy, about 2 minutes.
· Add egg and molasses, beat until combined, scraping down the sides as needed.
· On low speed, slowly add dry ingredients until combined, do not over mix.
· Roll 1-2 tablespoons of dough into balls and place on prepared cookie sheets about 2 inches apart. Bake 9-11 minutes.
· Cool for 5-10 minutes before enjoying.
Optional: Before baking, roll each individual cookie dough ball in granulated sugar.
Makes about 24 cookies.
