Pancake Flour Muffins


  • 2 Cups New Hope Mills Buttermilk or Old-Fashioned Buckwheat Pancake Mix
  • 1 Cup Milk
  • 1 Tbsp. Melted Butter or Oil
  • 1 Egg
  • Optional:  Add fresh blueberries or alternative topping of your choice!

Drop egg into flour; stir in milk and butter. Bake at 450 for 12-15 minutes.

Leftover muffins? Scoop out insides and fill with creamed chicken, fish or vegetables. Sprinkle with grated cheese. Bake at 350 for 10 minutes.
