Ingredients:
Batter Mix
- 2 cups New Hope Mills Blueberry Pancake Mix
- ½ cup sugar
- 1 ¼ cup milk
- ¼ cup oil
- 1 egg
- 1 ½ cup fresh blueberries
- Optional: 1 tsp lemon zest
Streusel Mix
- ¾ cup New Hope Mills Apple Crisp Mix
- ⅓ cup brown sugar
- 1 tsp cinnamon
- 4 Tbsp butter
- Optional: ¼-⅓ cup chopped nuts
Directions:
- Preheat oven to 350°, grease a 9×13 pan.
- In a medium bowl mix Blueberry pancake mix, sugar, milk, oil and egg. Stir until well incorporated. Add lemon zest if desired.
- Pour the batter into the prepared pan.
- Gently drop fresh blueberries evenly over batter.
- In a small bowl mix New Hope Mills Apple Crisp mix, brown sugar, and cinnamon.
- Incorporate butter using a pastry blender carefully so as not to over-mix, until crumbs form. Add chopped nuts if desired.
- Sprinkle streusel evenly on top of blueberries and batter.
- Bake 25-27 minutes or until a toothpick inserted comes out clean.
