Blueberry Buckle Cake

Ingredients:

Batter Mix

Streusel Mix

Directions:

  1. Preheat oven to 350°, grease a 9×13 pan.
  2. In a medium bowl mix Blueberry pancake mix, sugar, milk, oil and egg. Stir until well incorporated. Add lemon zest if desired.
  3. Pour the batter into the prepared pan.
  4. Gently drop fresh blueberries evenly over batter.
  5. In a small bowl mix New Hope Mills Apple Crisp mix, brown sugar, and cinnamon.
  6. Incorporate butter using a pastry blender carefully so as not to over-mix, until crumbs form. Add chopped nuts if desired.
  7. Sprinkle streusel evenly on top of blueberries and batter.
  8. Bake 25-27 minutes or until a toothpick inserted comes out clean.
