Ingredients:
- 2 cups New Hope Mills Gingerbread Pancake Mix
- ½ cup brown sugar
- 1 stick of melted butter
- 1 egg
Directions:
- In a medium bowl combine all the ingredients.
- Form the dough into two disks and wrap individually in plastic. Cool in refrigerator for 2 hours.
- Preheat oven to 350ºF. Unwrap firm, cooled dough, and place on a floured surface.
- Let the dough warm for about 5 minutes for easier rolling, then carefully roll out.
- Cut out shapes and place cookies on a baking sheet (parchment recommended). Bake for 10-12 minutes.
- Cool for 1-2 minutes on the baking sheet before transferring cookies to a wire rack.
- After completely cooled, frost and decorate if desired.
- Store in an airtight container.
