Ingredients for the crumble:
- 2/3 cup brown sugar, packed
- 1 tsp cinnamon
- 8 Tbsp (1 stick) melted butter
- 2/3 cup flour
- ¾ cup coconut
- ¾ cup roughly chopped walnuts
Ingredients for the cake:
- 1 ½ cups New Hope Mills Buttermilk Pancake Mix
- 2/3 cup sugar
- 1 egg
- 3 Tbsp softened butter
- 2 tsp vanilla extract
- ½ cup water
Directions:
Preheat oven to 350°F. Grease a 9×9 square baking pan.
In a medium bowl, combine ingredients for the crumble and set aside.
In an electric mixer, cream the butter and sugar until smooth. Add the egg and vanilla and mix until well combined. Add the pancake mix and water and blend at low speed for one minute. Beat for five minutes on medium speed. Pour batter into prepared pan and top with crumble mixture.
Bake 30-35 minutes, or until toothpick inserted comes out clean.
