Cookie ingredients:
- 1 package of New Hope Mills Sugar Cookie
- 1 egg
- 1 tbsp water
- 1 stick of melted butter
Cream cheese frosting:
- 1 (8oz) package of cream cheese (room temperature)
- ½ stick of butter (room temperature)
- ¼ cup sugar
- ¼ tsp vanilla extract
Suggested fruit toppings:
Fresh strawberries, *peaches, blueberries, raspberries, kiwi, *bananas, etc.
*Any fruit prone to browning should be gently coated in lemon juice directly after cutting, before placing it on top of the pizza.
Directions:
- Preheat oven to 325° degrees.
- Mix cookie dough ingredients until well combined.
- Shape cookie dough into a ball. Place on a baking sheet lined with parchment paper. Roll and shape dough into a 12-inch circle, about 1/4 inch thick.
- Bake on the middle oven rack, rotating pan midway through baking until edges appear golden brown about 25-30 minutes.
- Cream together ingredients for frosting.
- Wash and cut selected fruit.
- When the cookie base has completely cooled, spread cream cheese frosting evenly over the cookie surface up to 1/4 inch of the outer edge. Arrange fresh fruit over cream cheese frosting.
- Serve after chilling for at least 1 hour. Best enjoyed within 24 hours.
