Frosted cookie desert pizza

Cookie ingredients:

  • 1 package of New Hope Mills Sugar Cookie
  • 1 egg
  • 1 tbsp water
  • 1 stick of melted butter

Cream cheese frosting:

  • 1 (8oz) package of cream cheese (room temperature)
  • ½ stick of butter (room temperature)
  • ¼ cup sugar
  • ¼ tsp vanilla extract

Suggested fruit toppings:

Fresh strawberries, *peaches, blueberries, raspberries, kiwi, *bananas, etc. 

*Any fruit prone to browning should be gently coated in lemon juice directly after cutting, before placing it on top of the pizza.

Directions:

  1. Preheat oven to 325° degrees.
  2. Mix cookie dough ingredients until well combined.
  3. Shape cookie dough into a ball. Place on a baking sheet lined with parchment paper. Roll and shape dough into a 12-inch circle, about 1/4 inch thick.
  4. Bake on the middle oven rack, rotating pan midway through baking until edges appear golden brown about 25-30 minutes.
  5. Cream together ingredients for frosting.
  6. Wash and cut selected fruit.
  7. When the cookie base has completely cooled, spread cream cheese frosting evenly over the cookie surface up to 1/4 inch of the outer edge. Arrange fresh fruit over cream cheese frosting. 
  8. Serve after chilling for at least 1 hour.  Best enjoyed within 24 hours.
