Ingredients:
- 2 cups New Hope Mills Apple Cinnamon Pancake Mix
- 16 oz ground breakfast sausage
- ¼ cup brown sugar
- 2 eggs
- 1 cup milk
- 2 Tbsp melted butter
- 1 tsp vanilla extract
- 1 tsp sage
- 2 apples peeled, cored, and diced
Directions:
Brown the sausage in a medium skillet over medium heat. Drain grease and set sausage aside.
Preheat oven to 350°F and grease an 8×8 square baking pan with cooking spray.
In a large bowl, combine the pancake mix, brown sugar, and sage. Stir in ¾ of the cooked sausage and ¾ of the diced apples, reserving ¼ of each to sprinkle on top. Mix in the remaining ingredients to form a batter.
Pour batter into prepared baking dish and sprinkle the reserved browned sausage and diced apples on top. Bake 50-55 minutes, or until toothpick inserted into the center comes out clean. Allow to cool for 10 minutes.
Serve with maple syrup.
