Ingredients for the crumble topping:
- 1/2 cup New Hope Mills Hearty Buckwheat Pancake Mix
- 2/3 cup sugar
- 4 Tbsp melted butter
- 2 tsp cinnamon
Ingredients for the cake:
- 2 3/4 cup New Hope Mills Hearty Buckwheat Pancake Mix (remainder of 1 bag)
- 1 tsp cinnamon
- 3/4 tsp ginger*
- 3/4 tsp allspice*
- 1/4 tsp ground mustard*
- 1/8th tsp black pepper*
- 1/2 cup sugar
- 2 eggs
- 4 Tbsp melted butter
- 1 cup milk
- 3/4 cup applesauce
*Spices optional, or to taste
Directions:
In a small bowl, combine the crumble ingredients and set aside.
Preheat oven to 350°F. In a medium bowl, combine the pancake mix and spices, set aside. Cream together sugar, egg, and butter, add applesauce and stir well. Add the milk alternatively with the dry ingredients. Mix until well combined. Pour half of the batter into a parchment lined and well-greased 8×8 pan. Top with half of the prepared crumble mixture, pour in remaining batter, and gently spread it evenly over the crumbs, then top with remaining crumbs. Bake for 40 – 45 minutes.

• 3/4 cup any type of fruit puree
• 3/4 cup plain Greek yogurt
